Delicious Roasted Chicken
Free Range - Unmedicated organic chicken
Roasted in the oven or bbq'd this healthy meal hits a home run
1 roasting chicken, about 4 lbs
1 onion, peeled and chopped
3 heads of garlic sliced in half
Sprigs of thyme, oregano and sage
2 lemons
4 yukon potatoes
1 sweet potato
1 yam
Seasonal vegetable such as zucchini, peppers, mushrooms
4 tsp ghee
Sea salt
Black pepper
Place the roasted organic chicken in a roasting pan and stuff the cavity with 1 head of garlic sliced in half, 1/2 onion, whole lemon (poke lemon with fork all over) and herb sprigs
Make a slight incision in the outer layer skin and squeeze the juice of the 2nd lemon into the incision so the juice is in between the chicken meat and skin, sprinkle sea salt and fresh pepper on top. Chop all the veggies and potatoes and place around the chicken in the roasting pan along with the garlic and other half of onion. Use 4 teaspoons of ghee to dollop over the potatoes and veggies. Bake in the oven at 375 for one hour. Turn the chicken over, give the chicken another squeeze of lemon in between the skin and meat and bake for another hour. If the juices run clear by the end of the 2 hours, the chicken is done.
